Wild Goose Winery Announces new Chef at Smoke & Oak Bistro

The folks at Wild Goose are spreading their wings this season, as the revamped and restyled Smoke & Oak Bistro has just made its debut. The all-weather, open-air seating area and fantastic new outdoor kitchen take full advantage of the enviable views over lush, mature vines. Gorgeous, relaxing, family-friendly and affordable, the new-and-improved Bistro enhances Wild Goose’s already high-flying reputation.

Joining the flock is the creative and talented Chef Richard Desnoyers. His long and laudable career and expertise with Canadian cuisine make him a great match for Wild Goose. Under Chef Richard’s skilled direction, the menu at Smoke & Oak has been significantly expanded. Beautifully complementing the celebrated Wild Goose wines, the Bistro’s fare still highlights the best of southern barbeque, but now with the influences of South America and the American Southwest. Using local ingredients, the result is a uniquely Canadian twist on these solid flavours. Chef Richard’s kitchen, anchored by a coveted Tennessee competition smoker, promises consistently delicious fare and exciting specials. Have a sneak peek at the new menu online, but have a napkin handy, as it’s a mouth-watering read.

That’s not the only thing at Wild Goose that will have you licking your lips. This season is the perfect time to take advantage of Wild Goose’s new release whites. Winemaker Hagen Kruger is excited about how these flavours have come together; the rich, fruity and crisp Double Gold-winning 2015 Pinot Gris, and the orchard freshness of the 2015 Autumn Gold fit right into Wild Goose’s ample and impressive portfolio. Both are available at the tasting room and in stores now.

Satisfy your other senses at Wild Goose, too. The highly-anticipated 2016 Vineyard Stage series has just begun! Relax overlooking the vines with a glass of Wild Goose and a plate from Chef Richard’s delectable accompanying buffet. The inaugural concert on May 1st (12-3) features Johnny Cash Tribute artist, David James and Big River. On June 18th (5-9), catch JUNO Award-nominated blues artist David Gogo. Other concerts this year include harmonica master Sherman “Tank” Doucette, and the exciting 3rd annual Beale Street Festival.
