NEW SEASON = NEW TASTES: RauDZ REGIONAL TABLE

Roslyne Buchanan · June 22, 2018 ·

At RauDZ Regional Table where the focus has always been on fresh, local and comfortable, taking a trip through the new menu is like strolling through a vibrant farmers’ market. Summer has arrived and there’s an abundance of fresh, new and seasonal taste sensations to fuel the culinary imaginations of the RauDZ team.

Just as flavoursome surprises are found throughout a farmers’ market, RauDZ inspirations have landed in all areas, including new wine menus, new cocktails menus and new food menus. Explore it logistically from top to bottom, if you choose, or dive right into dessert. Think cheesecake – Rhubarb and Ricotta or Strawberry Thyme Tart.

Throughout the menus, you’ll witness RauDZ love of the Okanagan’s bounty and rock-solid relationship with farmers, foragers, fishmongers, ranchers, winemakers, distillers, brewers and other producers. For example, close your eyes as you bite into the appetizer of Asparagus & Wild Mushrooms, and you’ll picture yourself on the fringe of an orchard by a forest. Or how about a tango on your tongue with the Scallop Crudo with Shaved Radish, pickled turnips, spring onion and whey vinaigrette?

New on the dinner menu is Bison Petite Tender & Ribs with Potato Fritters, spring carrots, pickled apples and turmeric aioli; Grilled & Smoked Pacific Salmon with rhubarb broth, spring vegetables, smoked chickpeas, rhubarb jam and chive oil; and rotating Butcher’s Cut and Codfathers Seafood Selection created by Chef Brock Bowes.

The wine list presents a great selection from small, bigger and harder-to-find wineries. In the small wineries category, think tiny bubbles. No really, Niche Wine Co. Small Batch Bubbles is the West Kelowna’s winery first edition of bubbles. Niche is part of the Garagiste group of wineries, so clearly small batch. Others include Pinot Blanc (only 80 cases made) from Anthony Buchanan, another Garagiste; Pinot Gris from Forgotten Hill Wine Co.; and Cabernet Franc 2016 from Synchromesh Wines. Bigger winery options include Mission Hill Winery Cabernet Sauvignon; Hester Creek Estate Winery Syrah Viognier; and Red Rooster Winery Cabernet Merlot.

The wine list treasure hunt offers the harder to find as well, such as Mirabel Vineyards Pinot Noir; Young & Wyse Collection Black Sheep; Similkameen Collective Consensus 2014; and Marionette Winery Zweigelt Pulcinella.

The cocktail menu also gets a seasonal transfusion. While the signature fruit martinis are always available, watch for the best freshly ripened fruit-in-your-glass as the growing season unfolds. That holds true, too, for RauDZ seasonal Gin Mule, comprised of Noteworthy Gin, seasonal fruit, mint, lime and ginger beer. Of course, in warm weather the sangria gets the nod from many as the perfect drink to cool down.

What’s ripening in the world around RauDZ dictates the menus, so visit often to experience Nature’s best.
