Recipe: Peach Bellini

Makes 6 servings

Peach Bellini’s may look like a Mimosa but the taste is quite different. Mimosas are made with orange juice and sparkling wine, while this Bellini is made with peach purée. 

Ingredients

2 c. sliced B.C. peaches (keep six peach slices aside for garnish) 

1/2 c. peach schnapps or peach vodka

1 bottle of your favourite sparkling white wine

For extra flavour and colour

1/4 c. strawberries 

Mint leaves for garnish if desired

Directions

Put peaches, strawberries, and peach schnapps into a blender. Blend at high speed until smooth. If you use frozen fruit, you will get more of a slushy drink.

Divide this mixture into six glasses and add sparkling wine. Stir gently and add your peach and/or strawberry garnish.

This peach puree can be stored in the fridge for a couple of days, or in the freezer for two months.
